Aligarh is an amazing place to dine in. The non vegetarian food is awesome and the quality of sweets is amazingly pure. Same with vegetarian fare. Kachoris, balushais, bread pakoras and namkeens. You name it and they have it.
But what reminds me most is Eid festival. Trust me in whole world it is Aligarh which celebrates it with biggest enthusiasm. And evry Eid apart from biryani, tikka, kebabs, currie you will find two things a must on every big heart household i.e. Shahi paneer and besan ke dahi vade.
Today I will tell you the most humble shahi paneer with very easy recipe.
1- 2-3 Cups of paneer cubes(chopped into small pcs)
2- 1/2 Cup Khoya (Mava) a must
3- 1/2 cup milk ( crumble the mava and mix with milk)
4- 3 Medium sized onions chopped into thick pcs
5- 3 Medium sized tomatoes chopped into big chunks
6- 4 Medium green chillies
5- 1 Tbsp garam masala
6- 1 Tbsp Black salt (kala namak)
7- 1/2 Tsp salt
8- 1 Tsp sugar
9- 6-8 Tbsp desi ghee
10- 1 TBSP Black cardamom powder (Must)
11 – 1/2 Cup tomato kethcup
12- Half medium capsicum juliens (Deep fried)
1- Heat desi ghee in pan and sprinkle 1 Tbsp black cardamom powder into it.
2- Now put chopped onions,tomatoes and green chillies into pan and saute well.
3- Close the pan with a plate and let it fry for 4-5 minutes.
4- Saute it and close the flame. Grind the this onion tomatoes with green chillies mix.
5- Grind it very well and add 1/2 cup water alongwith tomato sauce while grinding.
6- Put this paste back into pan,add black salt , nirmal salt, garam masala and let it simmer for few minutes.
7- Add sugar, mava milk mix and stir well.
8- Now add paneer and capsicum to it.
9- Keep stirring it for 6-7 minutes on lowest flame, close the flame and cover it.
10- Garnish it with desi ghee and red chilli flakes tempering.
